Take For Manchurian balls-
Take 1 cup cauliflower grated
Get 2 carrots grated
Get 1 capsicum chopped
Prepare 1 spoon cornflour
Get 1 spoon maida

Get 1/4 spoon red chilli powder
Prepare Pinch baking soda
Take as required Oil for frying

Make ready 1/2 capsicum julienne
Prepare 1 carrot julienne
Prepare 1 inch ginger chopped
Get 1 spring onion chopped
Take 4-5 garlic cloves chopped
Make ready 2 green chillies, chopped
Get as required Water
Prepare to taste Salt
Get 1/2 black pepper powder
Take 1 spoon soya sauce
Prepare 1 tsp ketchup
Get 1 tsp green chilli sause
Get 1/2 tsp vinegar
Make ready 1 tsp cornflour
Get 1/2 bowl water
Prepare as required Green onion to garnish
Steps to make Veg Manchurian:
Grate and chop the veggies then mix in a mixing bowl. Add salt and leave it covered for 10 minutes. After 10 minutes strain all the water from veggies using a strainer or a cloth. In a bowl add maida, cornflour, chilli powder and baking soda. Mix well and knead a smooth dough. Divide this dough into equal parts.
Deep fry these dough balls in oil on medium flame till they acquire a golden hue. Now get them out and fry once more on high flame for a few seconds till they get a crust around them.
For gravy take another pan and add 2 spoons oil in it. once heated add ginger, garlic and green chillies. Once sauted add green onions. Cook for a minute on high flame then add carrot Julian saute them for a minute then add capsicum julienne.
Cook veggies for a minute then add salt, black pepper powder, soya sauce, ketchup, chilli sauce and mix really well. Add water as required to make gravy. Add fried Manchurian balls and cook till they absorb all the flavor in them. Now in a bowl add 1 spoon cornflour and add water to it. Mix well to form a slurry. Add this slurry to Manchurian to help thicken the gravy.
Garnish the manchurian with green onions and serve them with rice, chapati or noodles or can enjoy them as a snack.
