The ingredients needed to make Egg tadka:
  1. Get 1/4 cup kidney beans
  2. Make ready 1/2 cup whole green lentil
  3. Get 1/4 cup whole yellow lentil
  4. Make ready 1 large onion chopped
  5. Make ready 1/2 tsp ginger garlic paste
  6. Get 1 large tomato chopped
  7. Get 1 tsp whole cumin
  8. Make ready 1 tsp coriander powder
  9. Get 1/2 tsp turmeric powder
  10. Prepare 1/4 tsp Red chilli powder as per taste
  11. Get 1 green chilli
  12. Take 1 tsp dry kasuri methi
  13. Take to taste Salt
  14. Take 4 tbsp vegetable oil
  15. Make ready 1 tsp tadka masala
  16. Get 1 tbsp lemon juice
  17. Prepare 2 tbsp butter
  18. Prepare 3 eggs
Steps to make Egg tadka:
  1. Soak the kidney beans and green lentil overnight (no need to soak the yellow lentil). In a pressure cooker, cook all the lentils with adequate water till 4th whistle. Now in a large pan heat oil and add cumin and green chilli. Now add the chopped onion and fry them with a pinch of salt. When the onions become tender, add the ginger garlic paste and stir. Then add the turmeric powder, red chilli powder and coriander powder and stir it again. Now add the chopped tomatoes and cover it to cook it.
  2. Stir fry them very well until oil separates from the masala. Now add the pre-boiled lentils and combine it with the masala. Now add 1 cup water and let it boil for 10 minutes. Now add the tadka masala and salt and mix it well. Now in a pan scramble the eggs with a little salt and add it to the lentils. Combine the eggs and lentils very well. Then add the kasuri methi and lemon juice and cook them covered for 3- 4 minutes.
  3. Stitch off the flame and add butter. Then serve hot with roti or paratha.
