Add the sugar into the bowl from Step 2 and beat together with a whisk until creamy.
Dissolve the gelatin by heating it in the microwave for 20 seconds. Pour the heavy cream into a separate bowl and whip it until soft peaks form.
Mix the gelatin into the bowl from Step 4. Then add in the lemon juice and lemon zest and mix briskly.
Lastly, pour in the whipped cream and mix it together with everything else. Pour the mixture into the mould from Step 1, even out the top, and leave to chill and set in the refrigerator.
When set, remove the cake from the mould, cut it into slices, and pour over your choice of sauce.
You can also try lining the bottom of the mould with a layer of sponge cake if you'd prefer.
