Instructions to make Roasted Chicken Thighs:
  1. Preheat your oven at 220 Degrees Celsius for 15 minutes while prepping the ingredients
  2. Wash the chicken thighs and pat them dry and apply the olive oil all over the chicken thighs
  3. Mix all the spices and salt in a small bowl to make dry rub and rub it generously on the chicken thighs
  4. Place the chicken thighs on a baking rack and put them in the oven (Middle rack)
  5. Pour half of the water in a large baking tray and put it on the lower rack. This will help the chicken retain all its juices while cooking since you will need high heat.
  6. Let the chicken roast for 40 minutes or until all the water in the baking tray evaporates.
  7. After 40 minutes take the chicken out and apply some more dry rub and flip them over.
  8. Refill the water in the baking tray and put the chicken back to roast for another 45 minutes.
  9. Take the chicken out and serve it with your starch of choice (I served it with roast potatoes & chili dip from Emilia’s recipe)
