The ingredients needed to make Mitai/Sweet Diamonds:
  1. Take 3 cups flour
  2. Get 1.5 tsp instant yeast
  3. Get 1/4 baking powder
  4. Make ready 1/4 tsp salt
  5. Get 1/4 tsp cardamon powder
  6. Make ready I egg(optional but it helps add to the softness of mitai)
  7. Make ready 3/4 heavy coconut milk
  8. Prepare Some light coconut milk
  9. Take Ingredients for Sugar Coating
  10. Get 2 cups sugar
  11. Take 1 cup water
  12. Make ready Pinch cadarmom powder
Steps to make Mitai/Sweet Diamonds:
  1. Sieve flour then add yeast directly into it then baking powder, Salt, egg and cardamom.
  2. Start kneading with the coconut milk adding little at a time until you have a good soft (but firm, not sticky) dough
  3. Knead for about 15 good minutes. Pounding as much as possible.
  4. To check that it has been kneaded enough roll it into a ball and using a sharp knife,make a deep slit through it.
  5. It should look a slightly bubbly on the inside.
  6. Set it aside and let it ride to double. Divide into 3balls then roll each ball out in to circle about 1/4 inch thickness.
  7. Cut into strips then divide each strip into small diamonds
  8. Place them in a floured surface whilst while you continue doing the same to the rest of the dough.
  9. Once you have cut them all deep fry them in hot oil till golden brown on both sides and set aside.
  10. For sugar Coating: Boil sugar, water and cardamon powder till syrup becomes slightly thick. (two threads consistency)
  11. Add the fried Mitai to this thick syrup and turn the heat down to low.
  12. The holding the pan on both sides start tossing the Mitai inside the pan so that the Mitai can be coated by the sugar syrup properly and evenly.
  13. Then place in another plate. Enjoy with tea.
