Prepare 4-6 mushrooms, finely sliced
Make ready 1 tbsp olive oil
Get Grated parmasan cheese (optional)
Steps to make Creamy Pasta:
Cook pasta according to packet instructions.
Heat the olive oil in a saucepan over medium heat. Add the onions and fry gently for a couple of minutes.
Next add the garlic and cook for another minute or so. Add the mushrooms and parsley. Fry for 4-5 minutes over a medium heat.
Add the stock and cook down until sauce thickens.
Next add the cream cheese, turmeric and nutmeg. Season with salt and pepper. Lower the heat it necessary and stir frequently.
Add the cheddar cheese and gently stir until fully melted.
Drain pasta well. Stir into the cheesey sauce until fully combined.
Sprinkle some parmasan cheese for serving.
