Take 1 cup For stuffing-Hakka noodles
Take 1 Capsicum

Take 2 tsp Hot oil for moyan
Prepare 200 grams Oil for deep frying
Instructions to make Chinese Noodles Mat Samosa:
First take all-purpose flour add Ajvwain, salt, hot oil mix well
Add water little by little to make hard dough, cover rest for 15 minutes.
Boil water with 1/2 tsp oil pinch of salt, add crushed noodles. Cook it neatly.
Pour in sieve to drain the water pour cold water to remove stickiness
Get all vegetables wash and cut into long pieces, blanch it, heat oil in pan, add cut garlic, ginger,green chilli, saute for 1/2minute, add blanched vegetables, salt for taste and saute for 2 minutes.
Now add Soya sauce,red chilli sauce mix well.
Now add boiled noodles,mix well,cook for few minutes
Noodles Stuffing is ready
Know knead the dough,make balls,roll chapati of medium size cut rectangle from it.
Cut in middle to make two strips, place the two strips overlapping one another as shown.
Put noodles stuffing in the middle portion make cuts to both ends.
The non-cut ends stick over the stuffing.
Now with the cut strips knit the mat like this alternate strips up-down.
Get all the samosas be stuffed.
Heat the oil, deep fry the samosas from both sides on medium flame then low flame till comes crispy.
Deep fry all the samosas.
Mat samosas are ready. Serve with tomato sauce or schezwan Chutney
