Prepare 1 tbsp all-purpose flour

Steps to make Noodles Spring rolls (with homemade sheets):
In a bowl add all-purpose flour, cornflour, salt and oil. Mix all ingredients well add water (little at a time) and knead the dough. Cover it and keep aside to set for around 10-15 mins.
After that knead the dough again to make it smooth, divide it into small balls and roll to give them round shape. Now take a small ball of dough, dust with little flour and roll it like puri. Make all puries similarly.
Now for making sheets, take one puri on a rolling board, spread little oil all over the puri, sprinkle some flour on it and spread evenly. Place one puri over another sticking the edges.(stuck three puri).
Now lift and dust with flour and roll it out big and thin. Heat a girdle or tawa and grease it with little oil. Once the girdle is hot place the poori and let it roast slightly from below. When poori is roasted from below and dark from above then flip it again to roast slightly from another side too. Place it out on a board and separate each wrapper gently.
Now for making filling - In a pan/kadhai heat oil add finely chopped garlic clove and spring onions, saute for few seconds, next to add sliced onions, shredded cabbage, carrots and capsicum.saute on high flame for about 2 mins. Next to add soya sauce, red chilli sauce, green chilli sauce, vinegar, salt and black pepper powder. Saute everything well.now add boiled noodles, saute on a high flame till everything well combined.filling is ready.
In a small bowl add tbsp of flour and as required water to make slurry.
Now making spring rolls - take a spoonful of prepared stuffing and place on spring roll sheet.spread the stuffing in elongated shape. fold over the corner tightly till it reaches half the sheet. - furthermore, fold over sides like a envelope leaving no air pockets or space as they absorb oil. Create crease and roll further.apply maida paste around the corners and seal the edges.
Prepare all spring rolls similarly.
Meanwhile heat oil in a kadhai and fry all the spring rolls (2-3 at a time) until nice golden in colour on medium heat. Noodles spring rolls are ready cut and serve hot with ketchup.
