  2. Get 1/2 kg boiled potatoes, peel and mashed
  3. Prepare 1 tbsp green chillies-ginger paste

  6. Take For wada mixture tempering:
  7. Take 1 tbsp oil
  8. Take 1 tsp urad dal
  9. Prepare 1/2 tsp mustard seeds

  12. Make ready 1 pinch asafoetida (hing)
  13. Prepare Few curry leaves
  14. Get For inner stuffing :

  16. Take As required Tomato sauce
  17. Take as needed Green coriander Chutney
  18. Make ready For besan batter for coating:
  19. Get 1 cup besan
  20. Make ready 1 tbsp red chilli powder
  21. Take 1/4 tsp soda bi carb
  22. Make ready to taste Salt
  23. Prepare Some Oil for frying
  24. Get To serve:
  25. Prepare As required Pav Wada dry garlic chutney
Instructions to make Ulta Pav Wada:
  1. In tadka pan add & heat oil on slow flame. Add urad dal and saute till pinkish in colour.Add mustard and cumin seeds as they splutter add turmeric powder, curry leaves and asafoetida. Off the flame.
  2. In mixing bowl add mashed potatoes mixture,add green chillies ginger paste,salt, lemon juice and above tempering.Mix well.Keep aside.
  3. Take one bread slice.. with the help of katori cut into round shape as shown. Similarly cut all slices of bread.
  4. Take 2 slices of bread,apply tomato sauce one slice, and green chutney on other slice as shown. Keep one slice upon other. Now spread prepared potato mixture on both sides of prepared bread slices as shown. Similarly prepared all.
  5. In another mixing bowl add besan, red chilli powder and salt,add enough water to make semi-thick batter. At the time of frying add soda bi carb and mix well.
  6. Heat oil in frying pan. Dip each prepared wada in besan batter and drop gently in hot oil. Deep fry on medium flame on both side till golden brown in colour.(Fry one at a time)
  7. Relish/ Serve Hot Delicious Ulta Pav Wada with dry garlic chutney.
