Instructions to make Golden yam with fish sauce:
Peel your yam and cut into desired shape,wash and put in a pot add the turmeric and salt to taste boil till yam is tender.
In a bowl break the eggs and add some salt whisk and set aside.put your frying pan on the stove and add some oil (shallow fry).dip the yam slices in the egg and fry till golden.
For the sauce, place your pot on the stove and add some oil add the onions(reserve some) and fry for about 2 mins then add the ginger garlic paste.Add the tomato and pepper mix and fry for some mins.
Add in your seasoning cubes, garam masala,thyme and salt to taste.when your sauce is fried half way through add your fish,remaining onions and basil cover and lower the heat and allow to simmer for about 10 mins.serve with the golden yam.
