  2. I remove the hamhocks from the cooker AFTER PRESSURE IS RELEASED. the pot should be about 3/4 full. put both bags of crowder peas. turn the fire back to high and allow them to come to a rolling boil. let cook for 10 minutes at a hard boil. (this will help make the 'gravy' on the beans).
  3. Turn beans down to Med low and let cook for 1 hr with a lid. keep an eye on them to make sure they are not boiling dry.
  4. Lay the hamhocks on top of the beans, the red pepper, and the okra. let cook for 20 more minutes.
