Instructions to make Kiwi and Mousse No-Bake Cheesecake:
Cover the bottom of the plastic containers with aluminum foil. Add butter to a bowl, and melt in a hot water bath or in the microwave.
Place the biscuits into a bag, crush, mix with the melted butter, and firmly press down into the bottom of the containers.
Add softened cream cheese and granulated sugar to a bowl, and then add in the lemon juice once it becomes smooth.
Dissolve the gelatin in water and place into a hot water bath. Add the heavy cream to another bowl, and whip until it thickens.
Add the yogurt, gelatin, and the heavy cream from Step 4 to Step 3 in that order, and mix together.
Spoon in the batter into the cups, smooth out the surface with the back of a spoon, and chill in the fridge until it solidifies.
Make the syrup. Add the kiwi (discard the white cores), honey, and lemon juice (optional) to a bowl, and mash.
Top Step 6 with the kiwi sauce from Step 7, and decorate with whipped cream or fruit if desired…
This version uses heart shaped cups. Unfortunately the cups were too deep and I couldn't line the bottoms with the cookie base. You can use a sponge cake base instead.
